Sometimes the most delicious dish comes from what you already have. Yesterday was ‘Employee Appreciation Day’ where Hubby works. That just means they cater a lunch for the employees. This month it was Mexican food, and Hubby brought all the leftovers home. There was no meat or tortillas left, just a huge container of shredded lettuce (that Hubby thought the ducks and geese would love), another large container of rice, some refried beans, Borracho Beans, cheese, guacamole, and red sauce. Oh, and of course, tortilla chips! I decided there was enough there to whip up a very decent dinner, without adding too much to it.
I had already set out boneless chicken thighs for dinner, so I cut them up into bite-sized pieces and cooked them up in my frying pan with a little olive oil and some Mexican seasoning so they would fit in with the rest of the meal. I warmed up the rice, beans, and tortilla chips and we had taco salad!
You can’t tell me that doesn’t look good….
A perfectly healthy meal! The kids were happy, Hubby was happy, and I was thrilled I could eat healthy! Oh, by the way, I didn’t eat all those chips… that was Hubby’s bowl!!
