Pinto Beans are great cold weather food!

Ok, I couldn’t resist, but I won’t finish the rhyme. I know it will be repeated too much tonight at dinner anyway. So today our temps dropped and there was actually frost on my steps and our windshields. That was before the sun came up though. When cold weather finally hits, I like to make a big ol’ pot of pinto beans, with cornbread on the side. It is what we do here in the south.

Pepper Bacon makes everything taste good!

I have a huge Crock-Pot, and if I make a full pot of pinto beans, we have enough left for more than one meal. I’ll either serve them for a side for a couple of meals or we’ll freeze them to heat up for dinner a week or two later. This recipe is simple, but I think the old, simple recipes are sometimes better than the fancy new ones!

Extra Ingredients for my Pinto Beans

I usually just dump it all in the slow cooker, flip it to high, and let it cook all day. I make cornbread just before I serve dinner, so it stays hot. This is one of the boys favorite meals, and honestly, mine too! You can add peppers or whatever else you think you would like in it to add a little flavor. Hubby always likes it best when I keep it simple, and the boys actually do too.

There's nothing better on a cold day than a big bowl of beans with cornbread broken up in it!
Ingredients
  • 1 lb pinto beans
  • 2 onions coarsely chopped
  • 1 pkg onion soup mix
  • 1 lb smoked ham hocks/bacon/ham/pork
  • 1 clove garlic, finely chopped
  • Worcestershire Sauce to personal taste (optional)
  • 5 cups water or chicken broth
Instructions
  1. Rinse beans in a colander, then spread them on the bottom of the pot.
  2. Sprinkle chopped onion, onion soup mix, Worcestershire sauce and garlic over beans.
  3. Add meat.
  4. Add water/chicken broth.
  5. Turn slow cooker to high and let it cook until the beans are very tender. 5-6 hrs
